Gluten-Free Pancake Recipe




Gluten-Free Pancake Recipe

    Prep: 15 min. Cook: 10 min./batch
    Yield: 6 Servings


Ingredients

    1 cup brown rice flour
    1/2 cup potato starch
    1/2 cup ground almonds
    3 teaspoons sugar
    3 teaspoons baking powder GF
    1/2 teaspoon salt
    2 eggs
    1 cup milk
    2 tablespoons butter, melted
    1 teaspoon vanilla extract
    1/3 cup miniature semisweet chocolate chips, mashed banana, blue berries or your favorite topping...

Directions

    In a large bowl, combine the rice flour, potato starch, almonds, sugar, baking powder and salt.
    In another bowl, whisk the eggs, milk, butter and vanilla; stir into dry ingredients just until moistened. Stir in chocolate chips if desired.
    Pour batter by 1/4 cupfuls onto a hot griddle coated with cooking spray; turn when bubbles form on top. Cook until the second side is golden brown. Yield: 12 pancakes.

 With my big family of non-gluten eaters, I double the batch. This recipe is so easy my dear son makes it, before I even get out of bed! So yummy…

I was tickled to be able to read and review Taming the Wind, as I had read the first 2 books of The Land of the Lonestar series.
 Taming the Wind is the 3rd and final book in the series and was just as good as the first 2. The characters were spunky and real and the whole story really came together with this third book.

 The main characters, Carissa and Tyler, were forever working out a new life lesson and Taming the Wind showed how they overcame their fears and challenges and in the end became one, just like God intended.
 I have read quite a few books dedicated to Historical Fiction lately, but Tracie Peterson has that special ability to breath life into her characters and draw the reader into the story and ultimately the history of our past. Of course these book would be nothing without that twist of the love story thrown in for good measure. This was an easy read that kept you entertained until the end.
 I highly recommend this book to all who love Historical Fiction!

Marigold pharmacy

So here is one of those nice, feel good stories.
I must tell you about a little shop I recently visited.
I know I bloged about it before, but here is an update....
 It is called the Marigold Pharmacy.
 The staff and service is a cut above.
 I went in with my good friend and her teen girls for the second time this year and we were browsing the shelves for odds and ends, looking for herbal remedies that were a tad more natural in nature than the products we have both been using.

So I wander up to the desk and ask, oh you know about a million questions rapid fire, and this very sweet owner/operator pops back into the back of the store and whips up a remedy likety split!

Now that IS service. I just had to write and tell you about this because well it is just not every day that you come across this kind of service and friendliness.

 Some of my questions may have been funny, and or personal in nature. I am not saying they were either of those, now they could have been and if they were this fine pharmacist wouldn’t have even blinked he would have just answered any old question, very professionally.

I love this guy! He is so super helpful and kind..and no I am not reviewing his store, I just wanted everyone to know how cool this store is, and because I am trying to bring you natural type products I thought you might like to try this little gem of a store out!

So I recommend you drop by this town and pop in for a wee visit, perhaps you have a pressing need for natural toothpaste as well! Oh and they have really, really nice lip balm too!

Winter Wonderland



Ah Winter in the country!

This is a shot of our property by the river.
 I could just stare at the wonder and beauty all day. If you told me a year ago I would come to love the serenity and peace this crazy middle of nowhere affords I would have called you loonie, or somewhat addle minded!
 I moved under duress. 
But God always has a plan, and never one you can imagine up, let me tell you that.

But on days when the mud is covered with fresh pristine white snow, I am apt to fall head over heels in love with the sheer beauty of it all.
Holidays are over, and my good friend has made her way back home, but she left a wonderful gift, a freshly painted home. Gone is the electric yellow and in its place is a mellow mushroom color. I am smitten!
You see as cheerful as the color yellow is I am just not a morning person and every morning I would get up to greet my day, I felt like jabbing my eyeballs out, for the sheer brightness of the house. This morning I got up to eye numbing serenity…ahhhhh…..So happy!
  I was so in love with the color I decided to do the upstairs as well. (It was also yellow)

So home school classes have begun, and having gotten into the habit of staying up until 1 am every night, blogging it has been a tad rocky of a start…for me…The kids are doing just fine, thank you.

My next post will be about my obsession with Book reviewing and how you too can fall in love with the printed word!
 So stay tuned I will give away all the secrets to getting connected to publishers who will grace you with books to read and review. LOVE IT!

My reflections:

Beyond ordinary is a “he said, she said” memoir designed to take your marriage beyond ordinary to extraordinary. I must say I was a little bit skeptical when I received this book.  I have been married for over 18 years, ordinary moments just happen in that time frame.
Although I feel I already have an extraordinary marriage, my eyes were opened to realities I didn’t consider, that could cause conflict in the future, and I was so glad to have read this book!
The book takes you into the very personal lives of the Davis marriage. You see the good the bad and the ugly, and along the way learn the tidbits of truths about the spiritual battle we all face in our relationships. This book definitely was not at all what I expected; it is fresh, real and painfully honest and transparent.
I enjoyed the format of the book you get both perspectives of Trisha and Justin and at the end of each chapter there are questions you and your spouse can use to dig a little deeper. It was easy to read and the layout was orderly and easy to follow. I enjoyed the bible verses that pertained to the chapter readings it was seamless and done beautifully.
This book is truly not an ordinary do this and it will fix everything kind of book. It is a dynamic though provoking, personal narrative, that will change your relationship with God and your spouse.
 It is even a wonderful resource for single or dating individuals, as it prepares your heart for the spouse God has designed just for you.
 I think this is a book that should grace every  book shelf.

Book Review: The Breath of Dawn by Kristen Heitzmann

Kristen Heitzmann in her new book, “The Breath of Dawn” Book Three in the Spencer Family series published by Bethany House takes us into the life of Quinn Reilly.

My Reflections:
Get ready to dive into a wonderful new novel by Kristen Heitzmann.
You get the treat of being reunited with a few familiar characters (Noelle/Rick & Jill/Morgan).  Ms. Heitzmann has brought back members of the Spencer family in the third installment of her, "Rush of Wings" series. This fabulous romantic suspense also introduces us to Quinn Reilly and her relationship to Morgan and Livie.

Morgan Spencer is morning the loss of his wife. He is desperate to make a good life for his little daughter, Livie, but he is a man griped in his grief.  When he buys a house adjacent to his brothers property, he meets Quinn Reilly (named after her grandpa's dog) Sparks are imminent, but Morgan wants to keep his distance and his little daughter central in his life.

Quinn, is a woman who lives off the grid - to keep someone she sent to prison from finding her, she does what she must to protect herself. She keeps busy, and supports herself buying and selling goods through eBay.
Will meeting Morgan and little Livie be enough to change a woman on the run? Can she trust him?
 I will not give one iota of this narrative away, and seriously hold onto your story line because the twists and turns are abundant and the suspense is enough to keep those pages flying hotly into the wee hours of the night.

This is a chunky book at 433 pages long, but you will be wishing it never ended when you sink your teeth into It. This book is complex and engaging with drama and suspense, the story line feels at times to be a tad slow but I think the point of this is to engage the reader and set the stage, for a more complete read and to really get to know the characters. I love the way Heitzmann writes, it is such a pleasure to read her masterfully written story lines.

In addition to weaving a gripping tale, Heitzmann adds themes of trust and integrity (in God, family, prayer and faith) I think this was my favorite attribute of the book, what could be better than a good tale with solid Christian values!

I recommend this book to any avid reader who has nothing better to do than read, because that is all you will want to do!

I spent my first six years in South Bend, Indiana in a house with a tornado cellar that gave me a love of damp, musty, mysterious places. To this day, I breathe in a cool cellar like incense. You may have noticed a few underground elements in my stories!
Transplanted at six, Colorado seemed dry and desolate, the towering mountains a view that could not replace green grass and lightning bugs. But I learned to watch for barrel cactus in the straw-colored fields in which my brother and I played cowboys and Indians. (I always played the Indian because the bow really shot the arrows and all he had were caps.) We tramped pasture land, waded holding ponds teeming with tadpoles, and toted them home in coffee cans to hatch into hundreds of speckled, penny frogs. At night, with the neighbor kids, I played kick the can on the gravel roads and acreage around our far flung houses.
Between classical violin lessons, I rode my teacher’s purebred Arabians up and down the scrub oak covered mountain slopes. My sister, brother and I played Mozart at church on Christmas, and I subsequently taught myself piano, recorder, tambourine and guitar.
My passions were reading, art, and writing stories. But I also had a wild streak that called me outside to dissect grasshoppers and catch rock lizards and salamanders–for pets. Now my main passion is hiking the mountains I can’t live without.
I loved learning, but broke out of the family mold, by leaving college to marry my husband Jim (celebrating 32 this year.) I have two precious grandbabies who took my heart and won’t give it back.

Book review: Questions of Life by Nicky Gumbel

My Reflections:
I was excited to receive this book as I have never taken the Alpha course, and was eager to see what the teaching looked like.

It seems like a nice, neatly packaged little book for those seeking to know Christ better.
It is very basic and a good tool for new believers, and seasoned veterans as well.

Some of the topics it explores are, Who is Jesus?, Why did Jesus die?, How can we have faith?, How does God guide us?, and much more.
Gumbel describes himself as an intellectual, and in the past struggled with what he called a boring faith. He really didn't know very much about the Christian faith and what he did know was misguided. After reading the New Testament Gumbel became a Christian and wanted to help others grasp a meaningful relationship with God.

 His intended audience could include atheists and or people who are hostile towards the Christian faith.
Gumbel does not mince words, he says it like he sees it. His is view point is peppered through the book, and though I don't agree with every thing he is offering I think he has some good answers to consider.
If nothing else this book will get you thinking and digging deeper to find the truths you are seeking.
